How does Evernote work?

Someone had told me to get it on my computer and use it to organize my e-mails. I am not entirely sure what it is or how it works.
Can someone explain to me what it does and how I actually go about adding it?

Not sure how to add it to Outlook, but I use Evernote for keeping everything from random notes to recipes to to-do lists. It is a really nice program and it saves everything you do on a cloud, meaning that it is easy to recover everything in case you change hardware.
